Power Protein Egg Cups
These were great to make ahead of time and just pop in the microwave in the morning to make a healthy choice for breakfast!
**I was in the zone when cooking and forgot to take pictures. Next time I make them, will add pictures**
Prep time: 15 mins
Cooking Time: 20 minutes
Makes 6 servings, 2 egg cups each
Ingredients:
Nonstick cooking spray
1/2 cup unsweetened almond milk
16 large egg whites (2 cups) I just used the liquid egg whites
Sea salt and ground black pepper to taste
2 slices cooked turkey bacon, chopped
3 oz. cooked shredded chicken breast
2 cups chopped red bell peppers
1 cup chopped onion
Pinch of cheese
Directions:
1. Preheat oven to 350 degrees.
2. Place muffin liners in muffin tin or coat with cooking spray.
3. Combine almond milk and egg whites in a medium bowl. Season with salt and pepper. Whisk until blended and set aside
4. Evenly divide turkey bacon, chicken, bell peppers, and onion between prepared muffin cups.
5. Evenly pour egg white mixture over turkey bacon mixture.
6. Bake for 15 to 20 minutes, or until a toothpick inserted into the center of egg cups come out clean and eggs are set. I placed a few pieces of shredded cheese on top - just because I like cheese!
**To reheat, I place in microwave for 30 seconds and enjoy!

Mexican Lasanga
This light take on lasanga by adding southwest seasoning and refried beans made this dish eaten and enjoyed by all! Makes great left overs too.
Ingredients:
1 red and orange bell pepper
1 medium onion
1 lb lean ground turkey
1/4 cup Southwest Seasoning (the following recipe makes 1/4 cup)
1 tbsp chili powder, 2 tsp. ground cumin, 1 tsp. coriander, 1/2 tsp onion powder,
1/2 tsp garlic powder, 1/2 tsp dried oregano, 1/2 tsp smoked paprika. 1 tsp sea salt
Shredded Cheese
Can of Fat Free Refried Beans
2 small cans of diced chiles or 1 large can
2 tsp extra virgin olive oil
12 corn tortillas
Directions:
1. Preheat oven to 375 degrees
2. Dice the peppers and onions. Set aside.
3. Heat olive oil in large skillet and add diced peppers and onions. Cook until tender.
4. Remove vegetables from skillet and set aside.
5. Brown ground turkey in skillet just used from vegetables.
6. Add chiles to meat once brown. Stir and cook another minute.
7. Next, add cooked onions and peppers to meat mixture, southwest seasoning, and 1/4 cup of water.
8. Simmer for 10 minutes.
9. Spray bottom of 9x13 pan with cooking spray.
10. Line bottom of pan with 6 tortillas.
11. Spread with 1/2 of refried beans on tortillas.
12. Place 1/2 of meat and vegetable mixture over tortillas and beans.
13. Layer the remaining 6 tortillas on top of the meat mixture. Repeat spreading the refried beans and remaining meat and vegetable mixture.
14. Sprinkle evenly the top with cheese (if following 21 day fix, use 6 blue containers worth of shreeded cheese).
15. Bake for 30 minutes or cheese is hot and bubbly.
Makes 6 servings.
If following 21 day fix meal plan, it's 1 red, 1 yellow, 1 green, 1 blue.

Crock Pot Chicken Greek Pitas
So quick and easy to make this dinner! Loved all of the fresh veggies stuffed in the pita with the juicy chicken. Everyone gobbled this right up.
Ingredients:
1/2 medium onion, sliced
1 garlic clove, minced (I buy the minced kind in a jar)
1 lb boneless, skinless chicken breast tenderloins
1 1/2 tsp. lemon pepper
1/2 tsp. dried oregano
1/2 cup of water or chicken broth
1/2 cup plain yogurt (I couldn't find any individual size plain yogurts so had to buy the big guy)
1 tomato diced into chunks
Cucumber diced into chunks
Red pepper sliced into thin strips
1 package of pita pocket breads
Directions:
1. Slice up your onion and mince the garlic (if needed)
2. In the crock pot, put the chicken breasts tenderloins in and add the sliced onion and garlic.
3. Sprinkle on the lemon pepper and oregano.
4. Mix everything together, making sure to coat the chicken with the seasoning.
5. Add 1/2 cup of water or chicken broth (I used chicken broth). cover and cook on low 4-6 hours.
6. Before ready to eat, dice up the tomato and cucumber into chunks and thinly slice the red bell pepper.
7. When the chicken is done cooking, remove it from the crock pot and shred it. (DO NOT RETURN CHICKEN TO THE CROCK POT).
8. Stir the 1/2 cup of yogurt into the onion garlic mixture that is inside of the crock pot. Mix well so that all of the yogurt is incorporated. (Can use sour cream instead of yogurt, but not as healthy).
9. Heat pita bread in microwave for 20-25 seconds for each 1/2. Spoon the shredded chicken onto the warm pita bread. Put on top the yogurt/onion mixture.
10. Top with the tomato, cucumber chunks, and red bell pepper strips.
11. Enjoy!

How 21 Day Fix has changed my eating habits
The other morning, I had no idea what were going to have for dinner. It was either going to be frozen pizza (didn't want pizza because trying to eat healthy) or something with frozen chicken. While I was working out that morning, I was thinking about what could I do with frozen chicken and a crock pot.
Then, I remembered I had some diced tomatoes with jalapenos so threw that in the crock pot, quickly made a taco seasoning from a recipe I googled, added some water and set the crock pot on low for 9 hours. My idea was we were going to have our own burrito bowls, like Chipotle. I left the house with my fingers crossed it would taste good that night.
Came home, shredded the chicken and added all of the fixings. Man, it was DELICIOUS! Best meal we have had in awhile (maybe it was because it was at the last minute thrown together and I am someone who needs a recipe to follow).
Before 21 day fix, I would have been just fine with the frozen pizza. Now a days, I try to avoid it and try to make healthier choices for my family. The 21 day fix taught me how to eat healthy. It's not a diet, it's all about knowing what is healthy for you and portioning it out. It has definitely taught me how to be more consequence of what I put into my body. Preparing healthy, clean eating food is our new lifestyle. I feel better, am happier, and get better sleep because of it.
