Crockpot Chicken Fajitas



I love crock pot meals - especially this one with MINIMUM prep time!  Just slice veggies, mix together and done! Chicken was very juicy and full of flavor. 

Ingredients:
3-4 boneless skinless chicken breast
4 cloves of pressed garlic (I used minced garlic)
2 tsp of chili powder
2 tsp cumin
3-4 bell peppers sliced (any color)
1 large onion sliced
1 14 oz can of diced tomatoes

For serving:
Whole Wheat Tortillas
Cilantro (Optional)
Cheese (Optional)

Instructions:
1.  Put all ingredients in the crock pot and cook on low for 8-10 hours or high for 4-6 hours.



(If you can, add the sliced bell peppers to the slow cooker in the last hour so they aren't too soggy. Otherwise, put them in with the rest of the ingredients.)

2. When done cooking, shred the chicken with 2 forks.



Serve:
Place a scoop of chicken mixture with onion and peppers onto a whole wheat tortillas.  Top with cilantro and cheese.  Enjoy!

If you are following the 21 day fix diet:
Place 1 red container of the chicken mixed with tomatoes and garlic onto a 1 yellow whole wheat flour tortilla.  Top with 1 green container of sliced peppers and onion.  Can use a blue container of shredded cheese as well.

1 fajita= 1 red, 1 green, 1 yellow and an optional 1 blue.

Crock Pot Pork Chops



This recipe is delicious AND 21 day fix approved! The pork chop was so tender and juicy.  Sweet potatoes were a good change from the other potatoes.  Quick, easy, and tasty!



Ingredients:
Small onion
4 potatoes (either regular or sweet. I used a combination of both)
10.5 oz chicken broth
4 pork chops
Salt and pepper for pork chops (optional)



Directions:
1.  Dice onion.
2.  Peel and cut 4 potatoes into chunks.
3. Optional: Season pork chops with salt and pepper.


4.  Place onion and potatoes in crock pot.
5.  Pour chicken broth over top.


6.  Set 4 pork chops on top of potatoes.

7.  Cover and set on low for 6 to 8 hours.

Turkey Sloppy Joes

 

This meal is a healthy alternative to sloppy joes.  We all gobbled these up fast!  I served them with my new favorite side - sweet potato fries.  YUMMY!  Definitely a WINNER for this family and will be enjoying these again soon!

Ingredients:



1.25 lbs of lean ground turkey, chicken or beef ( I used turkey)
1 carrot (I used baby carrots because they were on sale)
1/2 large onion, diced
1 red bell pepper, diced
2 garlic cloves, minced (I just buy the jar kind - about 2 tsp)
Pinch of onion powder
1 tbsp of red wine vinegar
1 tbsp of Worcestershire sauce
2 cups of tomato sauce
2 tbsp of tomato paste
Buns

Directions:
1.  Finely chop red pepper, onion, carrots, and garlic.  Set aside.

 
2.  Brown meat in skillet.

3.  Add chopped veggies and pinch of onion powder to meat once browned. 


4.  Reduce heat ot medium and add red wine vinegar and Worcestershire sauce.  Simmer for 5 minutes.

5.  Next, add tomato sauce and tomato paste.  Cover and reduce heat to simmer for about 5 minutes.



6.  Spoon onto bun.  ENJOY!

Parmesan Crusted Chicken (or Pork Chops)




Another CLEAN EATING recipe winner! This was SUPER QUICK to mix together and easy to make.  The chicken was JUICY and full of flavor. Will be making this again!







 Ingredients:

2 - 4 boneless skinless chicken breast or 2 lbs pork chops (I used just 2 chicken breasts). 
dash of pepper
1/4 tsp basil leaves
1/4 tsp garlic powder
1/4 tsp oregano
1/4 tsp thyme leaves
1/4 cup dijon mustard
2 tbsp olive oil
3/4 cup grated parmesan cheese


Directions:

1.  Preheat oven to 400 degrees.
2.  Season the chicken (or pork chops) with pepper.
3.  Mix the basil leaves, garlic powder, oregano, thyme leaves, dijon mustard, and olive oil in a bowl.


4.  Brush all sides of the meat with the mustard mix.





5.  Press the grated Parmesan cheese onto all sides of the meat.
6.  Place meat onto cooking sheet lined with parchment paper.



7.  Bake in oven for 15-20 minutes.

**The mustard mix makes enough to brush up to 2 lbs of meat.  I only used the 2 chicken breast and had PLENTY of mix left over.

Taco Turkey Burger






This burger is DELICIOUS with an explosion of flavor in every bite! Such a quick and easy thing to put together - and healthy too! Kid tested and husband approved.
 
 

Ingredients:
1 lb ground turkey
1 TBSP minced garlic
1/4 cup Southwest Seasoning mix from 21 Day Fix
 
Optional Toppings:
Fresh salsa
Lettuce
Avocado

 
Southwest Seasoning Mix from 21 Day Fix:

1 TBSP chili powder
2 tsp ground cumin
1 tsp coriander
1/2 tsp onion powder
1/2 tsp garlic powder
1/2 tsp dried oregano
1/2 tsp smoked paprika
1 tsp sea salt
*I made a double batch to make a 1/4 cup for burgers

Directions:
1. Make Southwest Seasoning Mix.

2. In a bowl, mix turkey, seasoning, and minced garlic together.
 
 
 
 
 
 
 
 
 
 

3. Once mixed, make 3 to 4 patties.
 
 
 
 
 
 
 
 
 
 

4. You can cook them on a grill or a griddle for 3 -4 minutes a side.

5. Add toppings and enjoy!
