My fitness journey

My Fitness Journey......Who can relate?

It was time! After having Olivia, life changed in a hurry. Being a mom to two kids was a big task like I had not imagined. Along with the craziness of 2 kids, I was starting a new job. I was beyond stressed and was not a happy person. That’s when I realized I needed to start taking care of ME so I can be a better mom, wife, teacher, and person.

Working out was always a way for me to feel good about myself and so I decided to set time as...ide for me to help me stay sane. I decided to join my friend's 21 day fix challenge group. It was one of the BEST decisions I made! The workouts are only 30 minutes, portion control eating, no counting calories, plus I get to eat chocolate and drink wine??

 

After doing 21 day fix for a few weeks, the pounds and inches started MELTING off! I couldn't believe it! I have my body back to a size it has not been in years! My friends couldn’t believe how much my body had changed in just after 2 weeks on the 21 day fix! This is the healthiest and skinniest I have been in years! Doing 21 day fix has changed my life for the better.

I want others to feel good about themselves so I decided to become a Beachbody Coach. I want to help and inspire others to get healthy and feel good about their body.

Buffalo Chicken Wrap

Buffalo Chicken Wrap


This meal is DELICIOUS! I love making this when I am craving buffalo wings.  This is a healthier version of them without all of that grease.  Finger licking GOOD!


Ingredients:
  • Whole Wheat Tortillas
  • Franks Red Hot Cayenne Pepper Sauce
  • 4 Chicken Breasts
  • 1 tbsp of Olive Oil
  • 3/4 cups water
  • Salt/Pepper to taste
  • Suggested garnishes: lettuce, tomato, cheese

Directions:

1.  Heat oil in 12 inch skillet until hot.
2.  Prep chicken breasts by patting dry and seasoning with salt and pepper. 
3.  Put chicken face down in skillet and cook for 5 minutes or golden brown on top.
4.  Flip chicken over, add water, cover, and cook on medium heat for 7 -10 minutes or until chicken 
     is at 160 degrees. 
5.  Once cooked, remove chicken and let it cool for a bit.  Then, shred with a fork. 


6.  Place Franks Red Hot Sauce in a bowl.
7.  Add shredded chicken to bowl and stir until evenly coated.

8.  Heat up tortilla according to package.
9.  Prepare wrap by placing chicken in middle with garnishes.

10.Enjoy!

Why blog name Healthy is Happiness

The reason I chose the name Healthy is Happiness is because being healthy has made me a happier person.  It has helped me to be calmer, feel confident in myself, and be happy in my life.  Who knew that eating clean food and drinking Shakeology daily would help give me a more positive attitude in life?! When I am eating healthy and working out, that is when I feel the happiest in my life. 

About me

I am a mom of 2 young kids and live in the Twin Cities Minnesota area.  After having baby #2, I wanted to lose the baby weight I had gained during pregnancy.  To help me, I did a round of Insanity, which I had used to help me lose the baby weight from baby #1.  After completing a round of Insanity, I was happy with my results but knew I could lose more.

That's when I decided to do 21 day fix to help me focus on portion control, clean eating, drink Shakeology, and do a different workout each day.  I was AMAZED at the results!  After my first round, I lost 10 lbs and went down 2 SIZES!!  I was in jeans that I have not fit into since my first child was born.  I was STUNNED!

With my new body, I was feeling confident, strong, energized, and healthy.  I decided to make it my mission to help others feel confident and strong in their bodies by becoming a beachbody coach and guiding others to reach their health goal.
