These brownies are amazing!! They were rich in chocolate and moist from the black beans. Couldn't even tell there were black beans in them!
Ingredients:
1 (15.5 oz) can black beans, rinsed and drained.
3 eggs
3 tablespoons coconut oil
1/4 cup unsweetened cocoa powder
3/4 organic sugar (I used Truvia sugar and was 1/4 cup and 2 tablespoons)
1 teaspoon vanilla
1/2 teaspoon baking powder
1 pinch salt
1/2 cup dark chocolate chips
Directions:
1. Preheat oven to 350 degrees.
2. Grease an 8 x 8 pan
3. In a food processor, add black beans and process until mashed. (I don't have a food processor so used a mixer and mixed them until all black beans were mashed).
4. Add eggs, oil, cocoa powder, sugar, vanilla, baking powder, and salt to black beans and mix well together until smooth. (Mix in food processor or mixer).
5. Spread mixture onto 8 x 8 pan.
6. Sprinkle the dark chocolate chips on top.
7. Bake in oven 30-35 minutes.
